Peach Crunch Cake - this gets 5 stars on flavor, fast, and delicious! This was fast and had a ton of flavor! Some people call these "dump" cakes, in that you just dump everything into a pan and then bake it. This calls for a yellow cake mix, and I did not realize that you really need to break up the "lumps" in the cake mix (not sift, but break them up completely) or you will end up with dry lumps that the moisture in the cake did not absorb. The only change I made to this recipe was that I added about 1 tsp of cinnamon to the brown sugar, which gave it an extra spicy flavor. 24.5 oz jar of sliced peaches in light syrup 1 package yellow cake mix 1 stick butter (1/2 cup), cut into 16 pieces 1 cup brown sugar 1/2 cup chopped walnuts Preheat oven to 350 degrees F. Layer ingredients in a 13 X 9 dish, in order starting with the peaches. Bake for about 40 minutes. Serve warm or cold… with or without ice cream.

Chicken & Spinach Pasta Bake 8 oz uncooked rigatoni 1 T olive oil 1 c chopped onion 1 (10 oz) pack frozen spinach, thawed 3 c cubed, cooked chicken breasts 1 (14 oz) can Italian-style diced tomatoes, drained 1 (8 oz) container Philadelphia chive & onion cream cheese ½ t salt, ½ t pepper 1½ c shredded mozzarella cheese Prepare rigatoni according to pkg directions. Spread oil on bottom of 11x17 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside. Drain chopped spinach well, pressing between paper towels. Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly.

"Easiest and Yummiest Crockpot Potato Soup" --- 1 30oz. bag of frozen, shredded hash browns {I used Ore Ida} 3 14oz. cans of chicken broth 1 can of cream of chicken soup 1/2 cup onion, chopped 1/4 tsp. ground pepper 1 pkg. cream cheese
Candy Cane Martini: Ingredients: 1 candy cane, crushed, for garnish 2 ounces Strawberry Vodka 4 dashes white Creme de Menthe 2 1/2 ounces of Cranberry Juice Ice cubes Directions: Place crushed candy canes on a small plate or saucer. Wet the outside rim of a chilled martini glass with water (or lemon). Holding the glass by the stem, rotate the rim to coat with candy. 2. In a cocktail shaker, combine vodka, creme de menthe, cranberry juice and ice; shake until well combined. Strain into prepared glass; serve immediately.
