Breakfast cookies - 3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups uncooked quick-cooking oats, 1/4 cup skim milk, 1/2 cup raisins, 1 tsp vanilla, 1 tsp cinnamon and 1 tbsp sweetener. Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes.

Prepare pancake mix as stated on the box. Then pour all the batter into a large ziploc bag and freeze! Once you are ready to use it, take it out of the freezer to thaw, snip off a corner of the bag, and you have quick & mess free pancake mix! It's a great way to use up a few cups of milk before it expires!

Ingredients- 1.5 cups of oats, 2-3 super rippened bananas, 1 cup of unsweetened applesauce, handful of craisins, cinnamon to taste. Pretty much just throw everything together, mix it up pretty well, and drop spoonfuls onto a baking sheet. Bake at 350 for about 35 minutes and then go to town! It's great and super healthy for you!

Brilliant! Why didn't I know this already? -- This link is actually for breakfast sandwiches (which you can freeze, who knew?!) but I also love the idea to cook eggs in muffin tins if you have a lot of people to feed and don't want to slave over a hot stove the whole time. ♥
