In a large bowl, whisk egg yolks, then whisk in buttermilk, butter, and vanilla until blended. Sift together flour, baking powder, baking soda, salt, and sugar. Add flour mixture to yolk mixture and whisk until smooth. In another bowl whisk egg whites until stiff peaks form. Fold one-third of egg whites into batter, then fold in remaining whites. Brush each well of pan with melted butter or spray with nonstick cooking spray. Starting with outer wells first, pour 2 Tbsp. of batter into each one, spreading batter evenly to fill the well. Cook until pancakes are golden brown underneath, 1½ to 2 minutes. Using wooden skewers turn pancakes over. Cook until golden brown underneath, about 2 minutes more. Keep warm in a 200° F oven while cooking remaining batter in batches.
