Busy Mom Puffins (Pancake Muffins) (my recipe adapted from these crazy blog moms who make them from scratch) Preheat oven to 350, mix 1 c pancake mix, 2/3 c water, 1/2 c syrup. Mix together, pour in greased muffin pan. Top with banana, blueberries, chocolate chips, pecans, sausage, bacon....etc. Bake for 12-14 minutes and serve. Easy, fast, delicious & no syrupy mess!!

Greek Yogurt-covered Blueberries. Stick a berry with a toothpick and dip/swirl in the yogurt cup and use a second tooth pick to push it off onto a cookie sheet. Do all of them and place in the freezer. After an hour you can pop them off the cookie sheet and into a plastic baggie. Makes 3 sandwich bags full :)

Breakfast bars. Press croissant dough in the bottom and sides of a 8x8 pan. Brown 1 lb. of breakfast sausage. Whip 5 eggs together and season with salt and pepper. Sprinkle cheese on top. Bake until the eggs are done on 350 (about 15-20 minutes). Cut and enjoy! No fork needed.
