Sweet Wheat Shortcake! This is the simplest and healthiest variation of shortcake I've found, and while I wouldn't call it a true shortcake, it was a yummy dessert of its own accord. It even had no unhealthy ingredients- it's made w/ whole wheat and only sweetened with honey, so I'm thinking it'd be a yummy breakfast food too (minus the whipped cream).
