Cook a pierced potato in the microwave until it’s soft all the way through – about 6-7 minutes total, flipping over every 1-2 minutes. Cut the potato in half, then cut each half into squares. Don’t cut all the way through, just down to the skin. Season with butter, parmesan cheese and Lowry’s seasoning salt, then pop them into the middle rack of your oven set to broil for 10-15 minutes.

Sliced baked potatoes: thinly slice almost all the way through. drizzle with butter, olive oil, salt and pepper. bake at 425 for about 40 min.

Allison Hemrick I have been making these for years. However, I cheat by using leftover mashed potatoes. Add diced onion, eggs, flour, a dash of milk, and any other seasoning that sounds yummy at the time. I form them into little pancakes and panfry them in olive oil. So easy, yet so delicious. I have trouble keeping everyone out of them while I'm making them.
