Skinny Pool-side Dip: 1 red pepper, 2 jalepenos (unseeded), 1 can of corn, 1/2 can diced olives, 16 oz fat-free cream cheese (softened), and 1 packet Hidden Valley Ranch dip seasoning mix. Serve with crackers. Delicious!!

Chipotle Chicken Taco Salad. Looks delish, and only 249 calories for 2.5 cups!

This is in my oven right now and smells amazing! I substituted applesauce for the oil and evenly split the sugar into sugar/stevia/brown sugar. I sprayed the top with pam and sprinkled chopped walnuts and cinnamon sugar on top to get a nice crust. Yum!

Brilliant! Sliced baked potatoes-- making these TONIGHT Method Preheat the oven to 220˚C (425˚F). Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals. Arrange the potatoes in a baking tray and insert the garlic in between the slits. Scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper. Bake the potatoes for about 40 minutes or until the potatoes turn crispy and the flesh is soft.
