Strawberry-Poppyseed Dressing. 1 cl garlic 1/8 slice of small purple onion 1/4 c sugar 1/4 c fresh strawberries, raspberries 1/3 c white vinegar 1/2 c extra light olive oil 1/4 tsp salt 1 tbsp poppyseeds. Put all ingredients (except poppyseeds) into a blender. Blend until entirely pureed. Stir in poppyseeds. I made this two ways Substituted a white Quince flavored Balsamic Vinegar, preferred this taste, or w/ white vinegar and a bit more tangy. Subst. honey for sugar to make thicker

Chickpea-Brown Rice Veggie Burger: 2 cups drained chickpeas mashed to 1 brown rice. Add minced shallot, garlic, fresh parsley, salt and pepper, 1 large whisked egg to bind. Make patties the italian meatball way (wet hands, roll and flatten in palm). Serve with mustard, red onions, wrapped in lettuce, tomato slices. Delicious.

2 large potatoes, scrubbed 3 Tbsp olive oil 1 Tbsp Italian Seasoning 1 tsp salt 4 Tbsp Parmesan cheese Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
