I remember my mom making these all the time! Poke Cake PSA This time every year I feel like it's my civic duty to write a poke cake public service announcement. For those of you who live in the Midwest, you are already familiar with this simple summertime favorite, but many others have never heard of it. When I first moved to New England and started making poke cakes, my friends and neighbors looked at me wide eyed and appreciative when I shared this wonderful cake with them. The best part? It's cheap and easy. Cheap and easy isn't always a good combo, but with cake it is. First, bake a cake. Any yellow or white cake mix will do. Don't get all fancy and bake a cake from scratch. It's really not necessary. Then find your favorite kid to poke some holes in it. I use a spoon handle to get the job done. Next, make some Jello (any flavor you like) per the instructions on the box. I make mine in the microwave and it works just fine. Pour the Jello on top of the cake, making sure to cover evenly. Once covered, pop it into the fridge for an hour or two. The longer, the better. Poke cake is always better chilly. Right before serving, spread Cool Whip on top. I'm loving this new Season's Delight French Vanilla. Yummy! Slice and devour. Nothing beats this on a hot summer's day. If you haven't made a poke cake before, go grab a cake mix out of your stockpile and get baking. Be sure to take this to any parties you are invited to this summer and prepare for oohs and aaaahs. It really is that good. Enjoy!
