Coconut chicken or shrimp: It has been snowing in the Northwest, and I have been cooking! This recipe is GREAT, and it breaks down the exact cost of making these vs buying them at a restaurant. I substituted the chicken for shrimp, and these were FAST (on the table in less than 30 minutes), delicious, and were given rave reviews by everybody! One note: do not substitute the Planko breadcrumbs for plain breadcrumbs. And, I used sweetened coconut vs unsweetened, and it was great.
