Cheesy Potato and Bacon Casserole. This dish was exactly as described. Prep time was less than the recipe suggested, as I cooked the bacon during the last ten minutes of the potatoes cook time. Tailor the flavors to suit your preferences by using Swiss cheese instead of cheddar or prosciutto instead of bacon. Since I used Cabot extra sharp cheddar and smoked back bacon, I thought there was sufficient salt added that way to the casserole to reduce the amount required in the recipe. I halved...

Cabot recently partnered with The Recipe ReDux - the first and only online cooking club hosted by registered dietitians and comprised of healthy food bloggers. We challenged members to create a new dish with Cabot's 50% or 75% Reduced Fat Cheddar, using it in a dish that showcased a vegetable, fruit or whole grain the blogger had never tried before.
