Personal Sized Baked Oatmeal with Individual Toppings: Gluten Free & Diabetic Friendly
Breakfast cookies - 3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups uncooked quick-cooking oats, 1/4 cup skim milk, 1/2 cup raisins, 1 tsp vanilla, 1 tsp cinnamon and 1 tbsp sweetener. Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes.

Fluffer Nutter Bites Ingredients: 1/2 cup peanut butter 1/2 cup honey 1 cup nonfat dry milk 36 mini marshmallows 1 cup chopped peanuts Directions: 1. In a medium bowl, combine the peanut butter, honey and dry milk. Stir until well combined and resembles cookie dough. 2. Take 1/2 Tablespoon of dough and wrap around each mini marshmallow creating a ball with a marshmallow center. Roll each ball in crush peanuts to coat.

Zucchini Tots. They were called zucchini bites, but I like "zucchini tots'' better. They are the healthy version of tater tots. The recipe for these couldn't be any easier.
Preheat oven to 350; smoosh 1.5 squares of break-apart refrigerated cookie dough into the bottom of each well. Place Reese cup upside down on top of cookie dough (or an Oreo!). Top with prepared box brownie mix, filling 3/4 full. Bake for 18 minutes.
