Yellow Squash Casserole Wash, cut 6-8 medium yellow squash into large cubes, steam with l/2 cup onion. Drain, mash, and add l/2 cup better, 3 eggs, l/2 cup bread crumbs, 1 cup shredded medium cheddar cheese, and salt and pepper to taste. Mix well. Sprinkle top lightly with breadcrumbs. Bake at 350 degrees until mixture is solid and slightly browned (approx. 30-45 minutes). Watch carefully, as oven temps/times vary.
