Homemade Salsa: 2 cans of diced tomatoes 1 litle can of diced green chilis 1/2 bunch cilantro chopped 1 clove of garlic minced or garlic powder 3-4 whole green onion (stem included) chopped up Couple shakes of red pepper flakes 1 tsp of salt (I usually add a little more...I like salty) Blend it all together minus the tomatoes, then add the tomatoes and blend a little mince the tomatoes....sometimes I like more chnky,sometimes I like it more smooth....opinion Enjoy!! Also a good dressing to make for taco salds is the tomatillo ranch from Cafe Rio...heard of it? One ranch packet 1 cup mayo 1 cup milk or buttermilk 4- 5 tomatillos cut is 1/4 peices and roasted for 15- 20 min at 400... One jalepen~o, seeded and minced 1/2 bunch cilantro minced 1 clove of garlic minced 3 Tbsp of lime juice Blend all together....sooooo yummy.

roasted butternut and sweet potato lasagna--made this last night for dinner. YUM! NOTES: * my husband and kids wouldn't eat it, but I LOVED it. come on people! * I left out the garlic but definitely recommend the browned shallots. Adds so much flavor * Some of my noodles weren't cooked all the way. Not sure if there's just not enough liquid in the recipe. But I recommend pre-cooking the noodles al dente first. * Definitely roast the squash first (rather than steaming). Takes more time but adds nutty flavor. * Don't forget the Sage on top! Subtle but closes the deal. YUM. I'm eating the leftovers as I type.
