The Original Buffalo Wing Recipe: Not so long ago, chicken wings were a throwaway part, fit for soup. But in 1964, Teressa Bellissimo of the Anchor Bar in Buffalo, N.Y., changed all that. One night, faced with a group of hungry men—friends of her son—she deep-fried wings, tossed them with hot sauce, and served them with celery and blue-cheese dressing. The men devoured them, the dish was added to the menu, and Buffalo restaurants soon created rival versions. The wings went national in the early ’90s, as the Buffalo Bills were making four back-to-back Super Bowl appearances. On game day, the Anchor Bar will sell, literally, tons of wings. (Two tons!)
