For anyone that may not know, the BEST way to make hard-boiled eggs is in the OVEN! Place the eggs in a muffin tray so they do not move around, turn the oven to 325 degrees, pop in for about 25-30 minutes and remove! Not only are they tastier, but they also are much easier to peel! Must try this.

Roasted Butternut Squash Soup  printer friendly recipe  1 large butternut squash, peeled, seeded, and cubed  1 large turnip, peeled and cubed  1 apple, peeled and cubed 1 shallot, peeled and cut into large slices  2 garlic cloves, peeled 2 sprigs fresh thyme  1 quart vegetable stock 1 teaspoon freshly grated nutmeg  Preheat oven to 400 degrees F. Place squash, turnip, apple, shallot, garlic and thyme in a roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss to combine. Tuck thyme between pieces of vegetable so it doesn't burn. Roast until vegetables are tender and browned, about 35 minutes, tossing once halfway through.  Transfer vegetables to a large pot set over medium heat. Add vegetable stock and simmer 10 minutes. Blend using an immersion blender or by cooling slightly and carefully transferring to a traditional blender. Grate nutmeg into the soup. Season to taste with salt and pepper.

Easy and Delicious! Peanut Butter Chocolate Bars: 1 (18.25) package plain yellow cake mix 1/2 cup butter, melted 1 cup creamy peanut butter 2 eggs 1 (12 oz) package semi-sweet chocolate chips 1 (14 ounce) can sweetened condensed milk 2 Tablespoons butter 2 teaspoons vanilla 1 cup coconut (optional) Directions:1) Preheat oven to 325 degrees.2) Combine cake mix,melted butter, peanut butter, and eggs in a large bowl using a mixer or spoon. Press this into a 9X13 pan reserving 1 1/2 cup of the mixture to crumble on top.3) In a small pot, melt chocolate chips, sweetened condensed milk, and butter. Remove from heat and stir in the vanilla and coconut.4) Spread chocolate mixture over the mixture pressed in the pan and then crumble the 1 1/2 cups of reserved cake mixture on top evenly.5) Bake for 20-25 minutes. Cool completely before cutting into bars.
