I'm a pretty die-hard Nikon user. I love that most functions have their own button and that you don't need to dig into menus to do simple things. But there's a lot to like about Canon too. If I were to switch to the beige side, here's what I'd buy.
Canon EOS 5D Mark III ($3,500): "At its heart lies an all-new 22.3-megapixel full-frame sensor that delivers stellar images up to ISO 102,400, and it's augmented by the new, blazing fast DIGIC 5+ processor for 6 fps shooting, a 61-point AF system, Oscar-worthy 1080p video recording, a built-in HDR mode, and a rugged magnesium alloy body with a stainless steel mount — all of which ensure that you get the shot you need, no matter the time of day, weather, or situation."

CANON POWERSHOT G1 X: "The sensor is a 1.5-inch, 14.3-megapixel CMOS design, larger than a micro four-thirds, though smaller than the APS-C sensors found in Canon DSLRs. The G1 X has some pro-level features, like being able to shoot in RAW format and an ISO that can go up to 12,800. Of course, it also shoots HD video (up to 1080p), and it has a 4X optical zoom. The fold-out LCD is really useful in composing hard-to-get shots."

Canon EF 400mm f/5.6L USM Super Telephoto Lens. I wish Nikon would make slower (f/4-5.6) super-teles for more budget conscious nature photographers.

Canon EF 14mm f/2.8L II USM Ultra-Wide Angle Lens. Super wide and fast. Good for low-light shooting in a tight space.

Canon C300 Cinema Camera: Canon prepares to take on Red Scarlet and (to a lesser extent) Arri Alexa. $20,000

Janessa VanOeffelen LOL I love how you put the price is $20,000 and Pinterest marked this lil' gem as a measly $20! :P
Janessa VanOeffelen pffft! we wish!
Canon 800mm f/5.6L telephoto lens: As far as I know, Nikon has never made and 800mm tele. Now, I don't have $11k burning a hole in my pocket, but you could get some serious reach and separation with this lens if you did.

Canon 24-105mm f/4L zoom lens: This is another great example of Canon making a really useful, high quality zoom at a decent price range. 24-105 covers the most common range you'd need (on a full frame camera anyway). Nikon has a low(ish) cost version of this lens, but it's not a great lens.

PocketWizard MiniTT1 Transmitter: Canon shooters have been lucky enough to use PocketWizard's new flash triggering system (wireless TTL!) for a while now. PocketWizard is still silent on when the Nikon version will be available.

Because Canons pro/prosumer bodies lack pop-up flashes, you'll need a separate transmitter if you want to use optically triggered wireless ttl flash.

This nifty-fifty is a full stop faster than my Nikon f/1.8. It also costs more than 7x as much.

Jamie Steckelberg Scott Canon also makes a $100 version of this lens, which is plastic, but still amazing. Its my favorite lens, use it in most of my sessions!
David Moore Or there's the one between f/1.8 (that's cheap and great), and this one (the mad priced L version). I use the f/1.4 and it's great.
Jake Easley This is my favorite lens, paired with my 5DII. I picked mine up used [in like new condition] through fredmiranda.com for $1050 over a year ago!
Standard telephoto zooms, 70-200mm, are super versatile. Unfortunately, my f/2.8 often stays home because it's so heavy (and pricey enough I wouldn't want to lose it). By giving up a bit of speed (f/4), this lens is cheap, light, and would definitely see a lot of use.

I think the 7D would make a great second camera body: it's cropped frame sensor gives you some extra reach with your long glass, the 7D adds video, and the files are pretty large (18MP).

This is a crazy-fast (f/1.2!!!) portrait lens. Right now, Nikon doesn't make anything this light-sensitive. F/1.2 lets you basically shoot in the dark--if lighting conditions demanded 1/4 second at f/2.8, you could shoot at 1/25th at f/1.2; amazing!

Jesse Kellestine Nikon has a model that shoots 0.7f most companies do. That being said... an insanely amazing purchase.
Because none of Canon's serious bodies have a built-in flash, if you plan on spending any time shooting in harsh daylight you're going to need to pick up a Speedlite. The 580 isn't as good as Nikon's SB-900, but flash is a trade off for going with Canon gear.

This is an insanely versatile lens with incredible range: from a decently wide 28mm, all the way in to a decently long 300mm. This would be great for covering sporting events (assuming you have enough light) from the sidelines: no need to switch bodies if the action gets too close for your long glass.

I wish Nikon made long/slow/cheap glass, like this 400mm f/5.6. By forgoing the speed of an f/2.8, you end up with a lighter and cheaper lens that still gives you the reach of a 400mm. Stick this on a cropped-sensor camera and you've got some real reach for very little money.

I really wish Nikon made this lens: a well-built, wide, cheap (ish) zoom. You sacrifice some speed and separation control (f/4 vs. f/2.8), but it's lighter and cheaper than the pro version. The closest think Nikon makes is about $500 more and weighs a ton.

If I was going to buy a Canon body today, it would be a used 5D Mark 1. The fact that you can get a well-built full frame camera for about a thousand dollars is amazing.
