Thomas Keller's favorite simple roast chicken.Two secrets to recreating this fabulous chicken is to make sure you get into all the chicken cavities with paper towels once you have washed it , to dry it very well inside and out. Once the seasoning is completed, shove it in the oven and forget about it……….don’t be tempted to open the oven and baste it – just leave it to do its thing for about 50 minutes to allow the skin to crisp. The resulting culinary masterpiece will knock your family’s socks off. My family likes plain old thyme on their chicken, so you can baste the chicken during the 15 minute rest time if you want to. ♥ this recipe. Foolproof.

Elyse Holladay i was kind of disappointed in these. the cupcakes were pretty flavorless, and my frosting didn't taste like champagne. possibly user error, but i'd replicate these with a better chocolate cake recipe.
