Diet Cola cake. I made this as cupcakes instead of cake, and used Diet Dr. Pepper instead of the Diet Coke pictured. My cake mix had pudding in it (through the recipe called for regular), and the results were great. Yield: 24 cupcakes, 80 calories each. Topped with 1T/10 calories of whipped cream.

Micah Hayhurst-Morris How did you like it? We made it the other day too and it was pretty good. I ended up transfering it to a pan though and finished it off that way since it wasn't cooking fast enough in the crock.

Amanda Huggins I didn't make the baby hat portion, but I used this tutorial for knit flowers to modify/coordinate outfits for family pictures. All four girls will sport the same flower on their clothes or in their hair. I gussied them up a bit by stringing on some seed beads when tacking the inner petals down.

Amanda Huggins I made these with a mint oreo, and they were AWFUL. The mint was a bad idea, but even the cheesecake was bitter. Not sure what went wrong, but I will not make these again.

Amanda Huggins Another shockingly easy recipe! I made this stovetop instead of in the crockpot because I needed a fast lunch. It worked great and tasted great! I used fat free cream cheese because that's what I had on hand, but I diced it first so it would melt. It melted fine and tasted good, but I imagine the full fat cream cheese would have made the dish taste richer. It was yummy cooked stovetop, and it will be a go-to recipe as needed, but cooking in the croclpot would have made the potatoes more tended and given the flavors time to meld together. We topped ours with cheddar and homemade bacon bits.
