Coconut Creme Cake - yellow cake made per directions, 15 ounce can of Cream of coconut, large can sweetened condensed milk, pour all over the top of the warm cake. When cool, ice cake with Cool Whip. Refrigerate.

Skinny Pool-side Dip: 1 red pepper, 2 jalepenos (unseeded), 1 can of corn, 1/2 can diced olives, 16 oz fat-free cream cheese (softened), and 1 packet Hidden Valley Ranch dip seasoning mix. Serve with crackers. Delicious!!
creamy chocolate fudgesicles :: * 2 T cocoa powder * 1/2 cup canned coconut milk * 2 small, very-ripe bananas (200g) * scant 1/16 tsp salt * 1/2 tsp pure vanilla extract * optional: feel free to add peanut butter! Combine all items in a blender. Pour into popsicle molds and freeze. (These are AMAZING!!! I have a feeling they will be a summertime favorite at our house!)
