Jessica Lau jackie - i've decided we're kindred spirits - this is my favorite quinoa recipe as well!! and i definitely add in avocado! I've also put it in a wrap, with spinach, and goat cheese, and it's FABULOUS!

Jessica Lau Made this before Jackie! Really good - but I suggest you cut the garlic in half and then add a little as you go along! I think I also added some cilantro as well! :)
1 cup oatmeal 1/2 cup peanut butter (or other nut butter) 1/3 cup honey 1 cup coconut flakes 1/2 cup ground flaxseed 1/2 cup mini chocolate chips 1 tsp vanilla.

Potatoes, zucchini, baby carrots, sweet potatoes, whole garlic cloves, onions and tomatoes at 350 for 45 minutes. Dust with parmesan for the last 10 minutes.
