Jenny David I used balsamic instead of sherry vinegar. It was really good.

Vegan Nacho Taquitos: I just prepare the filling and use as a dip for chips. This is one my family loves and I often serve to my childbirth classes, because it is so healthy and a great source of protein.

cheesy quinoa bites. These are so amazingly good. You could totally leave out/substitute the cheese for vegan. :)

These were SUPER easy and AMAZINGLY good. Didn't change a thing and loved them! Easy Oven Roasted Potatoes 2 large potatoes, scrubbed 3 Tbsp olive oil 1 Tbsp Italian Seasoning 1 tsp salt 4 Tbsp Parmesan cheese Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat.  Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown.  Top with Parmesan cheese and bake an additional 5 minutes.

made this and added roasted rosemary red potatoes. it was super yummy. also, i didn't have fresh herbs but the dried worked just fine. :)

Sweet potato chips with cinnamon and sugar. I made these for snacks for D and her friend. They loved them!! I actually used one large yam and a little more oil that they recommend. I then laid them out on a sil-pat and sprinkled the cinnamon sugar over them, flipped them and sprinkled more. These really are SO good!!

Zuchinni Fries- the Pannko bread crumbs are a must here. If you substitute, your fries will be sad....and you will be too. My 2 year old ate helpings of these...

Roast veggie enchiladas. These are SO good!!! We used red sauce instead of green. I think that there actually needs to be more veg than they call for...but I like my layers THICK between tortillas.

Mango Rice Salad with Grilled Shrimp- Rice alone has me wanting more. Make sure you rinse the rice before you cook it. It makes all the difference.

grilled chicken tzatziki- we used store bought taziki as the sauce. We also added red onion and some chopped kalamata olives. Yummers!

Somebody's wonderful pasta. This has meat in it, but could be done with a vegetarian dinner sausage I'm sure. Super easy, and WAY good. We put a ladle full of the pasta water in when we mixed it with the pasta. Really did make it better

Mediterranean Grain Salad- So good. We served it on top of lettuce tossed with lemon and olive oil. I loved the crunch, my husband did not.

Channa Masala- We made this and it was really good. I think if we were to do it again, I'd put the spices in to bloom with the onions and use a bit of tomato sauce for more liquid. Serve with rice or the Naan recipe.

baked southwestern egg rolls - These were great - I think the filling could be made more flavorful so I might play with recipe next time, but will make again.

Black-Bean Tostadas with Corn Relish - These were yummy. We tried both flour and corn tortillas and everyone preferred the corn, even though they did not crisp up as much. Served with salsa and non-dairy sour cream. Yum.

Leeks Braised with Wine and Garlic - this was delicious. Served over whole wheat pasta the first day and for leftovers. Then added to a pot with water, can of chickpeas, couscous and some vegan boullion and this made a TERRIFIC soup).

Mexican Tortilla Salad (used cilantro jalapeno tortillas to make the crisps. Kept dressing on the side as this made more than enough for leftovers and I wanted to keep salad fresh for the next day. Also added some tomato and served with Corn On The Cob. Great combo of tastes.)

P.F. Chang’s Lettuce Wraps - Delicious! The sauce was had a great kick and the water chestnuts added the perfect amount of crunch. (made these with 6 oz of soy chicken replacement and a whole can of water chestnuts. Otherwise followed recipe exactly) Adapted from CD Kitchen Recipe. Serves 2-3 Ingredients: 1lb ground chicken breast 1/2 medium onion, minced salt & pepper, a dash of each 2 large cloves garlic, minced 1 inch gnob fresh ginger, peeled & minced 1 Tablespoon sesame oil 2 1/2 Tablespoons soy sauce 1/2 Tablespoon water 1 Tablespoon natural peanut butter 1/2 Tablespoon honey 1 Tablespoons + 1 teaspoon rice vinegar 2 teaspoons chili garlic sauce (or more if you like it hotter) dash of fresh pepper 3 green onions, chopped 1/2-8oz can sliced water chestnuts, drained & chopped 1/4 cup peanuts, chopped 10-12 large outer lettuce leaves, rinsed and patted dry
