Prepare pancake mix as stated on the box. Then pour all the batter into a large ziploc bag and freeze! Once you are ready to use it, take it out of the freezer to thaw, snip off a corner of the bag, and you have quick & mess free pancake mix! It's a great way to use up a few cups of milk before it expires!

TIP FOR KEEPING BERRIES FROM GOING MOLDY!! When you get your berries home, prepare a mixture of one part vinegar (white or apple cider probably work best) and ten parts water. Dump the berries into the mixture and swirl around. Drain, rinse if you want (though the mixture is so diluted I find you can't taste the vinegar,) and pop in the fridge. The vinegar kills any mold spores and other bacteria that might be on the surface of the fruit, and voila! Raspberries will last a week or more, and I've had strawberries go almost two weeks without getting moldy and soft.

Cook a pierced potato in the microwave until it’s soft all the way through – about 6-7 minutes total, flipping over every 1-2 minutes. Cut the potato in half, then cut each half into squares. Don’t cut all the way through, just down to the skin. Season with butter, parmesan cheese and Lowry’s seasoning salt, then pop them into the middle rack of your oven set to broil for 10-15 minutes.
