Lemon Poppyseed Pancakes. Really bright with all of the lemon (use all of the lemon zest suggested), and froze well too once cooked. Then just stick a frozen one in the toaster for a tasty snack! They microwave really nicely as well. I'd like to try it with whole wheat, but it was a special occasion so I used white flour.

Turkey Meatloaf with Feta and Sun-dried Tomatoes. I thought this came out great. I used about half and half lean ground turkey breast and dark ground turkey, and it came out well. When I make this in the future I'll be sure to use at least that much dark meat, since it's more moist and flavorful than the white meat. Great flavor in this!

Erin Beck Made these as muffin. They're moist and not too dense. Added shredded carrots, pecans, chia seeds and sunflower seeds too. Batter was very dense (not pourable) but they still turned out awesome. Next time I'll try substituting some of the coconut oil for applesauce.
Ottolenghi's sweet potato cakes. We devoured these and wanted more. Waiting an entire hour isn't really necessary; our potatoes were dry in under half that. Served with a big pile of leafy greens; I'd probably add roasted broccoli or asparagus as well next time.

Toddler Muffins - These lightly sweet muffins are made with bananas, squash, and carrots, and are perfect for picky eaters. - I used grated zuchinni instead of baby food squash & made a cake instead of muffins, but this is really good & not too sweet. great for breakfast

homemade mayonnaise - super easy - I used vinegar instead of lemon juice, & think it was too much. I think 1 T would be better. also, I used olive oil instead of vegetable oil, like she said she would do next time & it was too olive-y, for sure. I'll def be using vegetable oil next time, but the consistency was great & we ate it all up

Allison Pope Kaptein If you use light olive oil (as opposed to extra virgin) it doesn't taste like olives and is way better for you than vegetable oil

Gardener’s Pie - a really versatile dish that is difficult to mess up (unless it's too dry, make sure you have enough sauce!) I played with the spices and added in ketchup and it was great (I've used barbecue sauce before as well).

Simple potato gratin from Smitten Kitchen. We added sauteed shallots and shiitakes and brought to an Easter potluck; people seemed to enjoy it as there were no leftovers for us to haul home. An easy crowd-pleaser that I'll probably make again.

gingerbread baked oatmeal - I only had 3/4 c of milk, so I substituted 1 c greek yogurt for the rest of the milk & didn't have the texture issue she talks about in her post - my husband liked this baked oatmeal more than the pumpkin b/c it's more like a quick bread that he can cut & eat w/ his hands. Spring salad with new potatoes. I have enough southerner in me that I can't quite call this a potato salad (it lacks mayo), but it is delicious. I served with poached eggs on top and ate for dinner. I could see this with scrambled eggs in a tortilla making a refreshing breakfast burrito.

A Simple Tomato Soup. Versatile, easy, and delicious. We did it with coconut milk, a little sherry instead of part of the water (and cut the water down overall), cubed paneer, and served over rice with a poached egg. As Heidi notes, for BPA-free canned tomatoes, go with Muir Glen; their fire-roasted whole tomatoes are awesome. We'll have the leftovers with spicy veggie mac & cheese tonight.

Darcy Peth Lentils take a while to cook; the times quoted in this recipe are unrealistic. But, you can cut down cooking time by pre-soaking them, or my favorite method, use a pressure cooker. (Also, some varieties of lentils cook faster than others. Red lentils are the quickest).
Aithnea Micheals I agree with the unrealistic cook time and am wondering if it's a typo in the recipe. both green and red lentils tend to take around 40 minutes for me.
