Hollis Heffgrass Of course... We can always do several smaller cakes if you can't decide. ;)

Top layer and bottom layer with the long, tall liner look like this, but the middle layer with a bit of a floral touch like a "belt" for the cake. Maybe yes?

So.. what if the middle layer has a touch of this design, either in the color, or white with some "bling" (edible pearls, etc) and the top and bottom are more rustic (pics to follow)

Hollis Heffgrass its all buttercreme and incorporates the ruffles you love. plus, you could do the "ombre" look with a different color (pink/gray/yellow) on each tier!

graduated pink wedding cake; color or no color... and do-able in buttercreme.

Hollis Heffgrass combing texture is one way to go to add a bit of texture, too! But why not switch it up.... little stripes on the bottom, and large towards the top? Either or!

Hollis Heffgrass This is buttercreme ON fondant, which is also an option, especially with fresh marshmellow fondant. If you don't care about the perfectly rounded corners, and don't mind "angles" at the edge, the entire thing can be done in buttercreme of any flavor

Hollis Heffgrass This is what i'd call "rough iced" and while i like it, but i think this cake is incomplete. It needs a contrasting ribbon of crisp color to make it look less... "raw." but the icing technique is simple, classic (vintage!) and holds up well in any weather. :)

@Hollis Heffgrass i know i definitely want some kind of texture...i don't really want to follow trend or popularity though...and we are both anti fondant :) what are our options?

Hollis Heffgrass This is an option, as are "rough iced" cakes... and i'll tag you in some other good buttercreme options. But if you're set on the ruffles, they can be done in marshmellow fondant, which is pretty tasty!!!

Hollis Heffgrass I agree... i like it better for a single layer than an entire cake,but i love playing with texture! (although it always kind of reminds me of the stuff you line your shelves with! Is that weird?!)

Hollis Heffgrass It is definitely the delicate drapery of flowers in pastel hues that does this one justice. I am not an expert in making these myself, yet...each flower is a fine work or art in it's own. And they can be purchased from people who know just how to make each stamen and pistil to perfection if this is the one you love, and incorporated with ease.

@Hollis Heffgrass can get enough of the ruffles! would this be a possible option?

Hollis Heffgrass I knew before you asked. :) you've had a lot of these uber-girlie ruffles pinned, and they are all the rage right now, too. :) Just find the exact style (how many, what color--the ombre look? off white?--and the overall feel. it could work so many ways!

Hollis Heffgrass Absolutely. This one lends itself to being done in buttercreme (ie: white chocolate, Italian or the american version) OR in fondant; and the flowers can be real, dried, or sugar flowers. :)
