I have GOT to come up with some new "cold lunch" ideas for my son with Celiac's. School lunches just aren't cutting it!
Stir cucumber into laughing cow cheese, spread on GF wraps, layer with turkey slices and roll up! Can't wait to try!

Peanut Butter Waffle. Spread gluten free toaster waffles (Vans) with 2 tablespoons of peanut butter. You can also sprinkle on raisins, sesame seeds, or extra peanuts.

Cereal "Sundae" A bowl Rice Chex (or some other GF cereal). Make it portable by replacing the milk with lemon or vanilla yogurt and mixing it in a to-go container. Increase the fiber and vitamins by adding ¼ cup of nuts or fresh or dried fruit, such as chopped pecans or blueberries.

Chocolate Granola Bars. Need to make some of these for Kell's lunches (omit wheat germ). He loves granola bars and they are so easy to take.

Great lunch bag. My 16 year old son might even consider this one.

Great idea! Cut up an apple, put the slices back together, secure with rubber band. No browning!
