Judy Hopps My recipe: 1/2 cup vegetable oil 4 sq unsweetened chocolate (4 oz), melted 2 cups granulated sugar 4 eggs 2 tsp. vanilla 2 cups flour 2 tsp baking powder 1/2 tsp salt 1 cup powdered sugar 2 packages frozen Rolo caramel candies Instead of the squares of chocolate I use this formula: 3 level tbs of cocoa + 1 tbs shortening or oil = 1 ounce unsweetened chocolate. Mix oil, chocolate and granulated sugar. Blend in one egg at a time until well mixed. Add vanilla. Stir flour, baking powder, and salt into oil mixture. Chill several hours or overnight. Take a small ball of dough and form a ball around the rolo. (Only use enough dough to cover the rolo so it can spread through the cookie.) Heat oven to 350. Roll in sugar. Bake 10-12 minutes on parchment paper. (caramel will stick to the pan if you don't use parchment paper)
Made this. Zuchinni is good, dip is good. But, didn't care for the two together.
