Terri Dunderman When my kids were young, I did this every Sunday and froze them individually so that no matter what they had going on, they could take one out of the freezer, microwave, and get a nice hot meal.

2-Ingredient Cinnamon Apple Cake: 1 can of apple pie filling and 1 box of Angel food cake (dry mix only). Combine both ingredients in a bowl. Transfer to greased 9x13 pan and bake at 350 deg. for 20 minutes or until top browns.

1-2-3 Cake. I LOVE this idea!!! You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big ziploc bag or stir them together in a big bowl). Then simply store the mixture in an airtight container until you get the urge for dessert. Then just put three tablespoons of the dry mixture in a big coffee mug and stir in two tablespoons of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream whipped cream or whatever. :):):) Awesome for those of us who want something sweet every now without making an entire cake!!

My Creamy Crockpot Potato Soup Ingredients: 4 large Russet potatoes, peeled and diced 4 medium red potatoes, peeled and diced 1 medium yellow onion, diced 2 cups chicken stock 1/4 cup flour 1 pkg real bacon pieces (2.8 oz) 4 cups heavy whipping cream 1 cup sour cream Sea salt and ground pepper to taste Optional garnishes: chopped chives, bacon bits, shredded cheese, sour cream Directions: In a large (4-6 quart) crock pot, place potatoes, onion, chicken stock, flour, and bacon bits. Cook on low setting for 4 hours. Use a hand mixer to mash potatoes while still in the crock pot. Once consistency is mostly smooth, add whipping cream and sour cream. Mix well. Add salt & pepper to taste. Continue to cook on low for 30-60 minutes (stirring occasionally). Serve warm w/ garnish of choice.

Am I the only person who hasn't heard of "cooler corn"? As an obsessive food nerd, you'd expect that I would have at least heard of it, but over the weekend I was blind-sided by the simple genius of this method for cooking loads of corn on the cob perfectly. I was hepped to it while visiting my family in Maine . Short story: We like corn on the cob. And with eight adults at the table, that means a couple of dozen ears. We would have used the lobster pot to cook them all, but the lobster pot was busy steaming lobster. Then my sister, a capable Maine cook with years of camping experience, says "let's do cooler corn!" Before I can ask "what the hell is cooler corn?" a Coleman cooler appears from the garage, is wiped clean, then filled with the shucked ears. Next, two kettles-full of boiling water are poured over the corn and the top closed. Then nothing. When we sat down to dinner 30 minutes later and opened it, the corn was perfectly cooked. My mind was blown. And I'm told that the corn will remain at the perfect level of doneness for a couple of hours. Turns out, Cooler Corn is pretty well known among the outdoorsy set but for those of us who avoid tents as much as possible, it's perfect for large barbecues and way less of mess than grilling. In fact, I may even buy another cooler just so I'm ready for next summer. Now that I'm in the know

Ultra-Crispy Roast Potatoes..one of my favorite side dishes. Microwave quartered potatoes for 10 minutes. Drain water. Drizzle a fair amount of olive oil over the potatoes, gently toss the potatoes, and sprinkle with oregano. Put in a hot oven 450 degrees for about 20-25 minutes until crispy. Watch closely
