Serves 2 Ingredients: Crust: 3 tbsp + 2 tsps all-purpose flour 2 tbsp oat flour {or just use more all-purpose} 1/4 tsp sea salt 2 tbsp Earth Balance {or other soy margarine} Filling: 1/2 cup pumpkin puree 1/2 tsp cinnamon 1/8 tsp ginger 1/8 tsp nutmeg 1/8 tsp sea salt 1/2 tsp ground flaxseed 14 tsp pure vanilla extract 2 tbsp almond mylk 1 tbsp brown sugar 1 tbsp maple syrup Directions: 1) Preheat oven {or toaster oven} to 350 degrees. 2) In a small mixing bowl, mix flours and sea salt together. Cut in Earth Balance with a fork until mixture forms crumbles and holds together well. 3) Split dough in half, then each half in half. You should have four pieces. Using a rolling pin, roll each piece out very thin. Use a spatula to gently lift dough. Place one piece inside a ramekin, pressing down gently to the bottom. Place another one inside your other ramekin, also pressing gently. Leave other two pieces of dough to the side for a moment. 4) In another small mixing bowl, stir together all filling ingredients with a spatula until mixed well. Scoop evenly into ramekins. 5) Top each pie with remaining crust. Use a paring knife to make slits in the top of the pies to allow air to escape. 6) Bake at 350 degrees for 30-35 mins. 7) Remove from oven, top with a scoop of soy ice cream, and serve.
