Enfrijoladas... 4 c. Refried Beans, 1 c. Vegetable Stock, 1 c. Water, 1 T. Tomato Paste, 6 Medium Size Tortillas, 3 c. Shredded Monterey Jack Cheese... Heat up beans, stock, & paste into a thin sauce. Dip tortillas. Place in baking dish. Fill with cheese. Fold over the tortilla. Repeat. Pour remaining sauce in dish. Sprinkle with remaining cheese. Bake 350* for 10-15 min or until the cheese has melted.

Cleaning fruit: Fill sink with water, add 1 C. vinegar, mix. Add all fruit and soak for 10 minutes. Water will be dirty and fruit will sparkle with no wax or dirty film. Great for berries too--keeps them from molding.

Cauliflower Pizza Crust 2 cup riced cauliflower 1 .5-2 cup shredded mozzarella 2 beaten eggs 1 tsp crushed garlic 1/2 tsp Italian herbs (you can use oregano/basil) -(and I sprinkles some garlic salt on top because I love me some garlic) -(you can also brush some melted butter on top to give it a more browned crispiness) -I used my hands to mush this all together.400 for 10 minutes, then lowered to 350 and cooked for an additional 20 minutes.
