Krithika Muthukumar Tried this recipe, but cut the tofu too small. This ended up making the tofu too tough and didn't retain the tenderness inside the roasted "shell". Also may have oversalted :/

Krithika Muthukumar Tried this recipe with egg whites and cherry tomatoes. Bad combo that made the muffins a bit too watery.

Krithika Muthukumar Tried these today with rather large tomatoes. They didn't reduce down as much as the photo, but tasted great! :)

Krithika Muthukumar This one was a little bland. I ended up adding a bit of oregano and lots of pepper to add flavor. I also substituted edamame for the beans for a boost in protein--yummy!
