Southwest chicken!!!! We make This often... SO easy and SOOO yummy!! Chicken tenderloins-cut into small squares, 2 cups instant rice, 1 taco seasoning, 1 can rotel, grated cheese. Cook chicken in skillet. Add 1 1/2 cups water, taco seasoning and rotel. Heat to boiling. Add 2 cups instant rice. Stir, remove from heat and cover. Once water is absorbed, stir and top with cheese. Let cheese melt and voila!! Dinners served! Eat with tostitos, tortillas or by itself!

Chicken Ranch Tacos...These come out amazing in the crockpot! Use 2 lbs. of raw (not frozen) chicken breast, 1 packet of dry ranch dressing, 1 packet chicken taco seasoning & 1 can of chicken broth. Put that all in the crockpot and cooked on low for 3 hours then shredded the chicken and let it cook on low another 30 min. Heat the taco shells and assemble your tacos and oh my tasty eats!!!

Crockpot Italian Chicken: 4 chicken breasts, 1 packet Zesty Italian dressing seasoning, 1 8 oz. cream cheese (softened), 2 cans cream of chicken soup; Cook on low for 4 hours. If sauce is too thick, add a little milk. Serve over pasta.

Pool-side dip: 1 red pepper, 2 jalepenos (unseeded), 1 can of corn, 1/2 can diced olives, 16 oz cream cheese (softened), and 1 packet Hidden Valley Ranch dip seasoning mix. Serve with crackers. Delicious!!

Chicken Ranch Tacos - Cook chicken in the crockpot mixed with one 1oz packet of ranch seasoning mix, one 1oz packet of taco seasoning, one can of chicken broth. Cook on low for 3 hours. Shred chicken and serve with toppings. Yum!

Avacado Salsa Chicken. Bread chicken breasts and bake at 350 for about 30 min. Top with salsa and bake another 10min. Add the sliced Avacados and Pepper Jack cheese and bake till melted. SUPER YUMMY!
