Spicy Avocado Chicken Enchiladas. This looks good!

Spinach Salad with Chicken, Avocado and Goat Cheese: 8 cups chopped spinach (1 bag), 1 cup halved cherry or pear tomatoes, 1/2 cup corn (frozen, canned, or cut off the cob), 1 1/2 cups chopped cooked chicken, 1 large avocado (sliced), 1/3 cup crumbled goat or feta cheese, 1/4 cup toasted pine nuts, DRESSING: 3 tablespoons white wine vinegar, 2 tablespoons extra-virgin olive oil, 1 tablespoon Dijon mustard, salt and freshly ground black pepper, to taste. Sounds delish!

Very delicious. I added chicken instead of shrimp. Penne with tomato cream sauce. Uses Greek yogurt for cream. Takes 15 minutes to make.

CHEAP version of shellac- No more chipped nails: (1) Apply 1 thin coat of 5 Minute Gel Polish. (2) Apply 1 coat of Essie's 3 Way Glaze base coat. (3) Apply 2 coats of polish. (4) Finish with a coat of 3 Way Glaze. SO DOING THIS!!

BEST soap scum remover!! This REALLY works well. After trying a few other Pinterest suggestions, I made this. It's odd, but it's GREAT. Make a vinegar "gel" by thickening vinegar with cornstarch. The vinegar CLINGS to what ever you spray it on...thus gives it more time to work. A little detergent cuts grease. I heated 1 cup of vinegar and 1 T corn starch in the microwave for 2 minutes. Add 2 T dish detergent and put it in a spay bottle. Spray. Wait 1hr. Wipe. Rinse.

When you get your berries home, prepare a mixture of one part vinegar (white or apple cider) and ten parts water. Dump the berries into the mixture and swirl around. Drain, rinse if you want (though the mixture is so diluted you can't taste the vinegar,) and pop in the fridge. The vinegar kills any mold spores and other bacteria on the surface. Raspberries will last a week or more, and strawberries go almost two weeks without getting moldy and soft.

"The most important part of the layering is making sure the dressing and the spinach (or whatever 'leaf' you choose) don't touch. As long as they stay separate, these salads can be made up to 4 days in advance and will stay fresh in the fridge with a lid on. This is one of my tricks to eating salad everyday for lunch at work. I make a few jars on Sunday night and just grab one to bring to work everyday. When you're ready to eat, just shake it up."
