Grilled Mango & Goat Cheese Salad - 6 fresh, ripe and peeled mangos - 2.25 lb goat cheese, sliced into rounds - 1.5 cups, toasted and chopped macadamia nuts - 3 lb greens - 12 oz arugula - 24 oz balsamic vinaigrette Grill mango wedges over medium heat until marked. Coat goat cheese rounds with nuts. Bake at 350 degrees for 2-3 minutes. Toss greens with vinaigrette and top with mango and cheese.
