Southwest chicken!!!! We make This often... SO easy and SOOO yummy!! Chicken tenderloins-cut into small squares, 2 cups instant rice, 1 taco seasoning, 1 can rotel, grated cheese. Cook chicken in skillet. Add 1 1/2 cups water, taco seasoning and rotel. Heat to boiling. Add 2 cups instant rice. Stir, remove from heat and cover. Once water is absorbed, stir and top with cheese. Let cheese melt and voila!! Dinners served! Eat with tostitos, tortillas or by itself!

Brownies made in the waffle maker. Brownies in 5 minutes. Warm, and topped with ice cream. YUM.

Breakfast bars. Press croissant dough in the bottom and sides of a 8x8 pan. Brown 1 lb. of breakfast sausage. Whip 5 eggs together and season with salt and pepper. Sprinkle cheese on top. Bake until the eggs are done on 350 (about 15-20 minutes). Cut and enjoy! No fork needed.

---Slow Cooker: Salsa Chicken--- 4 boneless, skinless chicken breasts (frozen is fine) 1 cup salsa 1 can condensed cream of chicken soup 1 packet taco seasoning 1/2 cup sour cream 6 tortillas Place chicken in the bottom of your slow cooker. Sprinkle taco seasoning on chicken. In a bowl, combine soup and salsa. Pour over chicken. Cook on high 4 hours. Shred chicken with two forks and stir in sour cream. Serve on tortillas or as desired.

There's another recipe on the web, which was the basis of this recipe, however, I have changed it to use less cream. Still tastes good! I did end up using a little cornstarch to thicken. I guess you could sub heavy cream for the half-and-half to make it a little thicker without using cornstarch. The gnocchi is usually in the spaghetti section of the grocery store.
