Chocolate Chocolate Chip Bread Ingredients 2 1/2 cups all-purpose flour 1/2 cup cocoa powder 1/2 tsp salt 1 tsp baking soda 1/2 tsp baking powder 1 cup butter, soften 2 cups granulated sugar 3 large eggs 2 tsp vanilla 1 1/2 cups applesauce 1/8 tsp red gel food coloring, optional 1 1/2 cup chocolate chips Method 1. Preheat oven to 350˚F and spray two medium (9 x 5) loaf pans with nonstick cooking spray, or four/five mini loaf pans (5 3/4 x 3 1/4 x 2 1/4.) Don’t fill more than 2/3 full. 2. In a medium bowl, mix the flour, salt, baking soda, and baking powder and set aside. 3. In the bowl of a stand mixer cream the butter and the sugar until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add the vanilla and applesauce and mix until well combined. 4. Add the dry ingredients stirring until just combined. Coat the chocolate chips with 2 T. flour and stir into batter. 5. Spoon batter into prepared pans. Bake side-by-side for about one hour or until an inserted toothpick comes out clean. (Bake 35-40 minutes for the mini loaves.)

Triple-Chocolate Quick Bread •1-1/2 cups miniature semisweet chocolate chips, divided •1/2 cup butter, softened •2/3 cup packed brown sugar •2 eggs •1-1/2 cups unsweetened applesauce •2 teaspoons vanilla extract •2-1/2 cups all-purpose flour •1 teaspoon baking powder •1 teaspoon baking soda •1 teaspoon salt GLAZE:•1/2 cup miniature semisweet chocolate chips •1 tablespoon butter •2 to 3 tablespoons half-and-half cream •1/2 cup confectioners' sugar •1/4 teaspoon vanilla extract •Pinch salt •Ina microwave-safe bowl, melt 1 cup chocolate chips; set aside to cool. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs and cooled chocolate; mix well. Add applesauce and vanilla; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Stir in the remaining chocolate chips. •Spoon into four greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to wire racks. •For glaze, melt chocolate chips and butter in a small heavy saucepan; stir in cream. Remove from the heat; stir in confectioners' sugar, vanilla and salt. Drizzle over warm breads. Cool completely. Yield: 4 mini-loaves.

Delicious Chocolate Quick Bread 1 1/2 cups all-purpose flour 1/2 cup NESTLÉ® TOLL HOUSE® Baking Cocoa 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 cup (1 stick) butter, softened 1 cup granulated sugar 2 large eggs 1 cup buttermilk or sour milk * 1/2 cup chopped pecans, divided (optional) 1/4 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels CHOCOLATE HONEY BUTTER (recipe follows) PREHEAT oven to 350° F. Grease 9 x 5-inch loaf pan. COMBINE flour, cocoa, salt, baking powder and baking soda in medium bowl. Beat butter and sugar in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture alternately with buttermilk. Fold in 1/4 cup pecans. Pour into prepared pan. BAKE for 20 minutes. Top with morsels and remaining pecans; continue baking for 30 to 35 minutes or until wooden pick inserted in center comes out clean. FOR CHOCOLATE HONEY BUTTER: MICROWAVE 1/2 cup NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Mini Morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 30 seconds; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted; let cool. Beat cooled morsels, 1/2 cup (1 stick) softened butter and 2 tablespoons honey in small mixer bowl until fluffy. Makes about 1 cup. *NOTE: If you do not have buttermilk on hand, you can substitute sour milk made with NESTLÉ CARNATION Evaporated Milk (Regular, Lowfat or Fat Free). Nutella Banana Bread Ingredients 2 cups all-purpose flour 3/4 tsp. baking soda 1/2 tsp. salt 1/4 cup unsalted butter, at room temperature 1 cup granulated sugar (I used 3/4c splenda) 2 large eggs 1 1/4 cups mashed ripe banana (I used 3 medium bananas) 1/3 cup skim milk 1 tsp. vanilla extract 3/4 heaping cup Nutella Directions 1. Preheat oven to 350 degrees. Spray 8×4-inch loaf pan with nonstick spray. (I always use foil…it never sticks, and my pans aren’t soaking for days.) 2. In a medium bowl, whisk together flour, baking soda & salt. 3. In a separate large bowl, beat sugar and butter with an electric mixer at medium speed until blended. Add eggs, one at a time, beating well after each addition. Add banana, milk and vanilla. Beat until blended. 4. Add flour mixture, beat at low speed just until flour is incorporated (do not over mix). 5. Spoon Nutella into a small dish and soften in the microwave for about 15 seconds. Add 1 cup of the banana bread batter to the Nutella and stir until blended well. Spoon Nutella batter alternately with plain banana bread batter into the prepared pan. Swirl batters together with a knife. 6. Bake 50 to 60 minutes. (I baked it for 55) Cool for at least 15 minutes in the pan, and then turn out onto a wire rack to cool completely.
