Since I don't love traditional gravy...a Ginger based Au jus spices up our dinner... 1 large shallot, peeled and minced 1 medium clove garlic, peeled and minced 1 1/2 tablespoons finely grated fresh ginger 1 1/2 cups apple juice 3/4 cup low-sodium chicken broth 1 1/2 tablespoons lemon juice Pinch cayenne pepper 1 1/4 teaspoons arrowroot 1 1/2 teaspoons low-sodium soy sauce To prepare the au jus: In a medium saucepan combine the shallot, garlic, ginger, apple juice, chicken broth, lemon juice and cayenne. Bring to a boil and continue to cook at a low boil 3 minutes. Combine the arrowroot and soy sauce; stir into the liquid, reduce the heat and simmer 5 minutes. Keep warm.
