can't wait for sweet corn harvest!!! Want to know the easiest way to cook corn on the cob? Throw it in the oven at 350° for 25-30 minutes. That’s it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once it’s cooked.

Easiest breakfast ever! 1/4 cup oats, 1 egg, 1 tsp brown sugar, handful blueberries, splash of milk, dash cinnamon. Mix it all up. Stick in coffee mug in microwave for 2 minutes. Super yummy!

Mini German Pancakes 1 c milk 6 eggs 1 flour 1/2 t salt 1 t vanilla 1 t orange zest (optional) 1/4 c melted butter Preheat to 400. Blend first 6 ingredients in a blender. well-blended. Blend butter a little at a time to temper eggs. Grease muffin tins well, distribute batter evenly between 18-24 tins, a shy 1/4 cup ea. Bake for 15 min, or until puffy & golden. Served with your favorite toppings. (Mine was a dusting of powdered sugar and triple berry sauce. I have other suggestions up top)

Servings: 12 Mini Deep Dish Pizzas Calories: 66 Calories Per Pizza Weight Watchers Points Plus: 3pp for 2 Pizzas, and 5pp for 3 Pizzas

Polly Ann Blythe Wilted Watercress Salad Recipe Add to shopping list INGREDIENTS 2 bunches watercress (Try to get mature watercress as shown in the photo, not the baby watercress that Whole Foods carries. It will hold up better to the hot dressing.) 3-4 slices bacon 1/4 cup apple cider vinegar 4 teaspoons sugar Salt and pepper A pinch of ground mustard A pinch of paprika (sweet) METHOD 1 Rinse thoroughly the watercress, removing old leaves and thick stems. Set aside in a serving bowl. 2 Heat a small stick-free pan on medium heat and cook the bacon until done, several minutes on each side. Remove the bacon from the pan and put on a paper towel. Keep the bacon fat in the pan. 3 Add the cider vinegar and sugar to the bacon fat. Stir to dissolve. Sprinkle with salt and pepper, add a pinch of ground mustard and a pinch of paprika. Taste and adjust seasoning. This is a sweet-sour dressing, so if it is too acidic, add a bit more sugar, if too sweet, add a bit more vinegar. 4 Bring the dressing to a simmer.

Polly Ann Blythe Queso Blanco Dip (White Cheese Dip), The Second and Final Attempt Prep Time: 5 minutes Cook Time: 5 minutes Total Time: 10 minutes Yield: 30 fluid ounces 1 1/4 lb block White American Cheese (Land O'Lakes brand preferred), cut into 1-inch cubes 1/4 cup diced green chiles 2 pickled jalapenos, chopped 1 ounce pickled jalapeno juice 2/3 cup whole milk 1/2 cup cold water pinch of cumin (optional) Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted. Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish. *Recipe Note: White American cheese is found at most deli counters in your local grocery store. *Reheat Instructions: Store any leftover cheese dip in the fridge. Reheat in the microwave, stirring every 30 seconds until creamy and hot. Source

Love me some roasted vegetables! : red potatoes, russet potatoes, zucchini, red bell pepper, baby carrots, sweet potatoes, and whole garlic cloves dusted with parmesan for the last 10 minutes in the oven. Y~U~M
