When I was a teenager, our church sponsored a Vietnamese refugee family. The father was a Dr in Vietnam and had to go to medical school all over again once they came to America. He embraced America and wanted his wife to become an American citizen. My mother taught her English as a second language and coached her through her citizenship. The Dr also wanted to eat American food. So my mother taught her how to make pot roast and she taught my mother how to make egg rolls. I try to make a big batch of them at least once a year. They are great with spicy hot mustard! :)

Growing up my mother often made what we called "hamburger gravy". This would top either mashed potatoes or noodles. I've modified the recipe using ground bison instead of hamburger and yolk free egg noodles. My favorite veggie is green beans, and by far the best are pole beans! :)

Lynn Dean you'll have to share the recipe. I love Vietnamese eggrolls! Had a great little restaurant a block from my house when I live in the city - they were tops. Unfortunately not t here anymore:(
