I love everything about food and I enjoy cooking. However, being a single mom of two boys, if I'm going to cook, it needs to be easy...and it better be worth it. These are some recipes I've tried and loved and some I'd like to try.

Chicken and Vegetable Pot Pie - this is fabulous! It is a light version of the classic comfort food. I found it a few years ago and it has become a staple. To make it quicker, I sub a bag of Steamfresh veggies (whatever is on hand) for all the fresh veggies. Voila!

Darla Beckerson mmm they used to make these in High School...
Melt a stick of butter in the pan. Slice one lemon and layer it on top of the butter. Put down fresh shrimp, then sprinkle one pack of dried italian seasoning. Put in the oven and bake at 350 for 15 min.

Baby Blue Salad - this is a family favorite. I recommend making a double batch of the pecans, though. Otherwise, by the time you get the salad made, you won't have any left from snacking on them.
