lemony roasted cabbage. I would have taken a better picture but by the time I got back home to eat my husband and kids had eaten all but 1/4 of the head of cabbage! Cut one head of cabbage into 1/8's. Brush with a combination of 2 tablespoons olive oil and 3 tablespoons lemon juice. Liberally salt and pepper. Roast in 450 oven about 16-18 minutes on each side (flipping once).
