Homemade Clotted Cream: Pour 4 cups heavy cream into a shallow pan (such as a stainless steel roasting pan). Bake in a 200F oven for 8-10 hours until it has a thick golden crust on the top. Allow to cool for 10-12 hours. Remove the “clouted” top with a slatted spoon, put into jars and refrigerate for 2-3 hours The clotted cream will last for 3-4 days (use the reserved cream underneath for other purposes if you wish…such as baking scones!)
