Love this idea for making freezer egg McMuffin type sandwiches for busy mornings. Lightly grease muffin tins + crack one egg in each section. Stick these in a 350 degree oven for about 15-20 minutes. To assemble: whole wheat English muffins + egg + cheese + Canadian bacon/ham/sausage, wrap and freeze. Thaw and reheat in microwave.

Keep a bunch of hard-boiled eggs in the fridge (they last for seven days), or scramble an egg and roll it up in a flour tortilla.
