Mushroom Quiche...add caramelized onions and another egg. This is the quiche recipe @Binet uses with other fillings, too. Always throw in an extra egg.

Cook bacon in the oven. Cover cookie sheet with tinfoil first. We do 375 for about 20 min instead of 400 for ten because the lower and slower the more fat renders out. Then all the bacon is done at the same time, meanwhile you were free to make the rest of breakfast.

Michelle Rumple We do this all the time too. Much easier to cook the rest of breakfast, and clean up is much faster too.

*knancy * FYI, I tried it with the muffin tin, but they came out too thick...so I used a muffin TOP tin, and they came out PERFECTLY sized for sandwiches.
