Peppermint Patties. From the comments...add one or two drops of red food coloring for pink patties...don't make the patties too big (not much wider than the fork)...freeze patties for a hour before dipping in chocolate...use melting chocolate rather than chocolate chips...don't submerge the patties in hot melted chocolate for too long (you can always let them cool and re-dip).
