Cheesecake Fruit Dip: simple to make and delicious with fresh fruit. We prefer it WITHOUT the coffee liqueuer ~ and, if you mix 1/4 of the dip with Nutella you have a wonderful chocolate dip too. Sweet and creamy with just the right amount of vanilla and brown sugar, it's a sure bet for any get together. 10/10 RUTH YEAMAN

chicken salad made by mixing avocado, cilantro, salt, and lime juice with the chicken. No mayo. Oh my, sounds wonderful. Oh, and don't forget to add freshly cracked pepper and maybe some dried cranberries.

Sweet Onion & Bread Soup. Made this tonight and loved it! Changes: used brown onions roughly chopped the onions used half and half used more butter used 5-6 cloves of garlic only used 3/4 tsp dried thyme added an extra 8oz can of chicken broth added an extra 1/4 cup half and half added 3/4 tsp table salt The 'broth' was so savory and delicious, and while the bread did become soggy, I loved the flavor and texture it provided to the soup.

Bacon Pops - Goat Cheese Pops rolled in Herbs, Pecans, & Bacon! Summer appetizer! I have been testing recipes for a big crowd get together at my Montana home for Memorial Day. I decided one evening is going to be a "dinner on a stick", using all sorts of Pinterest recipes that are made or served on a skewer. These are SO GOOD!!! Easy to prepare. They were gone in seconds!

Crock Pot Creamy Spaghetti. I made this today and it so yummy! The only thing was when I broke the noodles in half when it came to stir it up they were really stuck together. So, I reccommend when breaking the noodles to shake them loosely. When I added the chicken broth I needed two forks to break apart the noodles. But easy,a money saver and delicious!

Bacon Avacado Chicken Club w/ Garlic Basil Mayo. 55 Stars! OMG this is a GREAT sandwich! The garlic in the mayo gets a bit hot, and hotter the longer it sits. Use a crusty bread thickly sliced, slathered in olive oil and broiled for the best texture and flavor. I bought the very small chicken tenders, pounded them thinner, and emptied almost all of the bacon grease from the pan to cook the chicken. Fast, flavorful, and a real man sandwich I made this on my outdoor grill - including bread.

Brenda Jurgens with the word limit, I couldn't mention - DO NOT SKIP THE GARLIC MAYO/BASIL dressing! It truly makes this sandwich - and I will use it on other sandwiches! Takes the ordinary to extraordinary!

Lynn Fields Can I say that this looks amazing? Indeed!

I haven not tried this specific recipe, however I put my sloppy joe over Texas Toast last night thinking I was complete genius for making such a tasty discovery, but apparently it's nothing new. If you haven't tired serving sloppy joes this way it's an absolute MUST!

Cilantro Lime Quinoa - I have been a little shy of making quinoa because it looked so darn healthy and a little bland. I stand corrected. Followed this recipe to the letter. It's very tasty. The texture is great. Enjoy!

No picture, but the most AMAZING flavorful couscous. I want some now. I didn't make the homemade chicken stock, but it was still incredible.

Since I couldn't find the preserved lemons at the time, I ended up cutting lemons into quarters for easy removal later and cooked them in the tagine. Still added a great flavor. I will try with the preserved lemons next time. This is to die for. Could be the best food I have ever cooked. I will post the couscous recipe I served with it. Was an incredible dinner.

Here are my 2 ricottas: On the left ricotta made with white vinegar (recipe: Anne Burrell), on the right, made with lemon juice (recipe:Epicurious)

5 likes 28 repins

RICOTTA Epicurious recipe vs. Anne Burrell's - So i made both versions today - the Epicurious one was grainier like ricotta and the Anne Burrell one was deliciously creamy but not as firm. My husband who is from Rome, like Anne's better. Tonight I'm going to serve both to my guests to see which one wins!

Anita Carder Brown I just made these. 4 simple ingredients, so easy and really, really good! Thick and moist and chocolatey goodness that won't dissapoint! I did not add vanillia or almond extract and they turned out excellent.

Luscious Lemon Bread. Next time I would make 6 little loaves and I don't think I would add fruit. Maybe serve it with fresh raspberries on the side and fresh whipped cream. The bread is very good and I will make it again.

5 Star! Strawberry-Poppyseed Dressing. 1 cl garlic 1/8 slice of small purple onion 1/4 c sugar 1/4 c fresh strawberries, raspberries 1/3 c white vinegar 1/2 c extra light olive oil 1/4 tsp salt 1 tbsp poppyseeds. Put all ingredients (except poppyseeds) into a blender. Blend until entirely pureed. Stir in poppyseeds. I made this two ways Substituted a white Quince flavored Balsamic Vinegar, preferred this taste, or w/ white vinegar and a bit more tangy. Subst. honey for sugar to make thicker

Linguine with "Bottarga" dried mullet roe, fresh grape tomatoes, and tiny mozzarella balls. SO EASY: sautee 3 garlic cloves in EVOO to impart flavor turn off heat- toss cloves add some grated or powdered mullet roe. Put cooked pasta in large serving bowl over halved grapes tomatoes and mozzarella balls (ciliegine) add chiffonade of basil, and the oil and bottarga mixture -- toss and serve with an extra pinch of the roe on top of each serving!

Another favorite Pasta sauce- my version has no garlic and i do a pinch of percorino and the rest is parmesan for a total 1/4C at the end. Also Bucatini are delicious but unruly pasta so we prefer rotini, spaghetti or rigatoni.

4 likes 12 repins

2 Tbsp olive oil, 2 cloves garlic (take out before serving), pinch red pepper flakes,1 cup diced pancetta or 1/2 lb chopped bacon,1.5 C heavy cream. 1 package Campanelle or Mezzi Rigatoni cooked al dente. In a pan sautee all the above ingredients until the edges are crispy add the cream at the end, simmer 1 min. In a serving bowl put 2 large fistfuls of clean arugula. Put the cooked pasta in the bowl over the arugula, add the pan contents, toss with the parmesan & Serve. YUMMY SUMMER PASTA!

Jennifer Darland Dillon Actually made our version of this for Easter and after, everyone adored them. A pretty Deviled-Egg plate is a must but not at all necessary!

Mediterranean Peppers: Oven roast the peppers until soft then peel: Take peppers and cut them into 1/2 or 1/4 depending on the size. Chop and mix: a couple of anchovies, 2 Tbsp capers, 6 black olives, bread crumbs (pref. seasoned) olive oil, you can even add 1/2 can of tuna. Make a paste and then smear the paste onto the pepper slices - place on a cookie sheet, drizzle with bread crumbs and a little oil and and then broil in a toaster until top is a little crispy.

Fire Roasted Salsa. 5 Stars! I made this last night and it is so good! I used the canned tomatoes with Hatch chili's. If I could get fresh Hatch chili's, I would have added more (only change). I recently discovered the fire roasted tomatoes in the grocery store, and what a difference they make in the taste of salsa, marinara sauce, etc. This recipe is fast, and I believe a great canning recipe for this summer when tomatoes are at their peak and plentiful.

Deep Dark Chocolate Cookies: no butter or flour but oh-so-fudgey! 3/11/12. Another reviewer said she had trouble lifting them from cookie sheet. I did not experience this. When I made them, they were crunchy on the outside and easily slipped right off of parchment. Inside was moist and melty. I am always curious how the same recipe can result in such different outcomes. The science of baking is a mystery. 4 foodie stars.

3/25/12. tasty but they didn't quite look so "put together." cream filling was a little loose and didn't stay in the middle. yummy though. 3.5 foodie stars

5 likes 2 comments 17 repins

Profile picture of DeDe Long

DeDe Long was the filling loose because too much cream is called for? i haven't used ricotta in a long time; but if it's watery at all, maybe it should be drained? maybe the cream should be whipped and stabilized with gelatin? i don't know. :)

Profile picture of DeDe Long

DeDe Long *ooops, my bad...not ricotta; i've never used mascarpone. hmm.

Light Tiramisu Angel Food Cake. Birthday cake this weekend. 3/30/12. It was delicious and simple. Next time, I would reduce the amount of sugar but it would probably be perfect for most sweet eaters. I tend to like my desserts less sweetened. Coffee flavor was perfecto! 4 foodie stars.

Sweet Balsamic Glazed Pork Tenderloin Recipe (Slow Cooker) dinner week of 3/26/12. looked nothing like the photo and usually I can manage I pretty close redo. Glaze gets "steamed" and slides off pork dripping into cooking juices instead of actually glazing the pork. It was a little dry because of the tenderloin cut. Lack of fat+long cooking time=dry meat. Will try again and make some adjustments. Disappointed in outcome but not a total bust. Has potential. 2.5 foodie stars.

Incredibly Easy, Healthy Chicken Parmesan. Doctor Oz. dinner week of 3/25/12. Delicious recipe. Low fat buttermilk and fat free crouton idea is genius. Served on oven toasted, garlic smeared, wheat baguette, open faced. No pasta this time. 4.5 foodie stars.

overnight crock pot apple cinnamon oats. jamiecooksitup.bl.... breakfast week of 4/1/12. virtually hands free, nutty, crunchy, wholesome deliciousness. my changes: wheat germ instead of flax, organic apple cider instead of water, reduced the sugar amount to 1 tbsp, maple extract instead of vanilla and eliminated the butter. Needed only milk for topping. Tasted like a less sweetened version of apple crisp. 5 foodie stars.

Crusty Bread! I have never made bread - even with my bread machine - way too intimidating. This is AMAZING! And, so easy! Mix the ingredients the night before, let sit until before dinner, pop in the heavy pot and put it in the oven. It is very crusty, and I estimate this was less than $2.00 to make! Great ideas on this site for additions to put in the bread, Rosemary, etc. If somebody makes this with whole wheat, please let me know if it is good! Highly recommend!

Easter treats - saw these floating around pinterest and tried them out for Easter : a few notes: 1. they tasted yummy - not as sweet as other marshmallowly treats. 2. I wish the recipe was more specific I used a little under 12oz of noodles and thought I should've used the whole 12oz, if not more. Too much mallow and it's difficult for the nest to maintain their shape. Next time I'll probably take a different approach with shaping the nests too.
