Great tip when using frozen seafood! When your seafood is defrosted, generously salt them. This will draw all the excess water out of them from being frozen, leaving you with plump seafood. Let your seafood drain in a colander for about an hour then rinse them and pat dry! Works best with shrimp and scallops!

For my onion loving friends, peel and core out a hole in top of onion, stick a beef bullion cube in hole, wrap in foil and put on the grill before what ever else you are cooking. You can also bake in the oven til tender. Enjoy!

Sarah Goldilocks Melted chocolate enrober is what it's called, since it's used for dipping waffle cones - I'm not sure how it differs from normal chocolate. When it's hot and melted, you put some in a pastry bag, cut off the tip, and then carefully squeeze chocolate onto the edge of the cake so that it spills over naturally. Since it's hot chocolate on an ice cream cake, you learn to be quick! ;)
Suzie Ridler Wow, that's the real food industry deal Sarah. Oh yes, squeezing that onto an ice cream cake must have had a steep learning curve. Good grief!
Sarah Goldilocks Ha, yeah. I've been working here for 9 months or so, but still sometimes forget I'm a "real" cake decorator now. ;) Oh yeah, there was a learning curve. Even now it's hard to avoid little beads of melted ice cream. Eee...

Sarah Goldilocks It definitely does take some strength. I remember being a little eight-year-old just starting in 4H - it was SO hard to squeeze those bags! I'm glad I can decorate cakes, but I really wish I was good at baking - bread just NEVER turns out for me. I think we had a bad batch of yeast or something... It was the joke around my house that if we ever needed to build something, we could use my bread instead of bricks. ;D
