Make meatloaf in a muffin pan- it cooks in 15 minutes! (Thank you Rachel Ray). Then 'frost' them with mashed potatoes

Grilled cabbage. If you have never had it grilled you are missing out! Cut a head into 4~6 pieces, put each on a piece of foil add a couple spoonfuls of butter, and top with bacon if desired. I also season it with season salt.
