Chicken Cobbler Casserole - So good! We used a French bread loaf instead of wheat bread & wished it had more bread. The next time we doubled the bread but only 1.5 x the stuff you mix with it (butter, cheese, seasoning) with everything else the same & loved it.

Mint Thins - I used a pack of Andes mints, cut each in half, pictured here ~ www.flickr.com/... (made 50 cookies)

Roasted Parmesan Green Beans

Chicken Parmesan Wraps Using Wonton Wrappers - very good but very crispy on the edges. You'll definitely want the extra sauce for dipping & we probably needed 1 min. less cooking time. (I used a flat pan, no wire rack, cooking spray)

Roasted Garlic-Parmesan Cauliflower - So good! Very similar to the way we make broccoli (add some lemon juice)

Slow Cooker Hoppin' John - Pretty good! Next time use 1/2c rice (as one commenter mentioned), more bacon (or something else), 1/2 of the spice, and make sure to cook the beans 4 hours before adding the rest.

We made this without the glaze & it was great.

Brazilian Lemonade - We make this with orange and it is sooo good!

Chocolate Covered Cheetos - Have mad these a few times & they are a big hit! They do not taste odd at all, but like a chocolate covered pretzel.

Baked spaghetti with cream cheese - Delicious! Creamy & crunchy, tasty & easy.

Bacon Wrapped Green Bean Bundles - These were tasty, easy to make, and looked fancy. They got a lot of compliments.

"The Best Broccoli of Your Life" - It really is delicious! I added just a light coating of oil & did not add it the 2nd time, it doesn't need it.

Chicken, Cashews, and Miso in a Wok - So few ingredients created a lovely complex flavor.

Chicken Tetrazzini - Have made this many times & everyone loves it. We do usually just half the recipe & don't make an extra to freeze because it is a little hard to mix (and one makes 2 meals for us already).

Ginger Scented Pecans - These are beyond good! It is the one recipe I *have* to make every year for Christmas & everyone raves about them.

Skinny Baked Potato Soup - So tasty! You would never guess there was a 'secret ingredient'.

Mashed Potato Egg Boats - Wonderful! We used a metal muffin tin and these came out great. The bottom did not stay together as well as the sides, so I think we might try not adding the butter to the bottom next time, to let it crisp more. (And less calories!)

Honey & Rosemary Chicken Legs - We liked the flavor of the sauce a lot (more lemon than honey or rosemary), but the chicken was a little too mild this way. (Perfectly cooked, but not really worth the effort of marinating.) You may want to dip the chicken in sauce as you eat or use small chunks of chicken with the sauce for more flavor.

Baked Cinnamon Tortilla Chips - I just spread un-melted butter on thinly with a butter knife & it worked well, very easy

Ooey-Gooey Peanut-Butter Brownies

Rainbow Cake - This was a big hit! Use 1 1/4 cup of batter per layer if you want yours to be a little shorter (about 3/4 the height of this one).

Chocolate Mint Thins (Could not find those mints so we used Andes mints cut in half. Here's a pic ~ www.flickr.com/ph... )

Grilled Corn on the Cob - 3 ways (Have only tried with the foil method so far but it worked great)

Easy Italian Herb Focaccia - Makes a large batch. Very tasty.

Lemon Kale Chips - Delicious! I used about half of the lemon & olive oil & broke them into 1" pieces. (I've made these before without lemon & it really adds a lot of flavor & lets you cut down on the salt)

Roasted Brussels Sprouts - Love these things. Didn't bother blanching.

Caramelized Green Beans - Very good, but not as mind-blowing as I was hoping. Not sure if they are worth so much effort.

Tortellini & Spinach Bake - Have made this multiple times & everyone loved it. I do cut the lemon in half & just use juice.

Baked Creamy Chicken Taquitos - These were so easy & tasty! I made a few minor changes ~ regular salsa (not green), taco seasoning/Sazon instead of cumin & chili powder, no cilantro, and Mexican cheese instead of pepperjack. Didn't line the pan & had no problems. (3 T of filling & 15 minutes was perfect)
