perfectly balanced mix of salty, sweet, crunchy and soft. The use of prosciutto and goat brie make it sophisticated enough to serve to guests. Accompany the sandwich with some fresh melon and an Orangina for a great summer lunch.

Bean Burgers Ingredients Onions, Canned beans (preferably white), Rolled oats, Chili powder, Hamburger buns, Lettuce, Tomatoes, Olive oil. Preparation 1. Cut a medium onion into chunks and put it in a food processor, along with 2 cups drained canned beans (white are best here, but any will work), ½ cup rolled oats, a tablespoon of chili powder and salt and pepper. 2. Pulse, stopping occasionally to scrape the sides as necessary. 3. Taste; if it’s too dry, add water; too wet, add more rolled oats, a tablespoon at a time. 4. Divide the mixture into four even patties and cook them in olive oil until nicely browned each side. (Turn carefully.) 5. Serve on toasted buns with lettuce, tomato and onions

This easy version of the Spanish favorite combines chicken, sausage, and shrimp with long-grain rice, peas, and canned tomatoes. Saffron, which usually gives paella its brilliant yellow-orange hue, is replaced here by budget-friendly turmeric. This party-friendly dish can be made ahead and reheated.

Smoky chipotle chiles in adobo sauce heat up this stove-top chicken casserole, which also serves as a delicious quesadilla filling: simply cut the chicken thighs into bite-size pieces before cooking, and eliminate the rice if you wish.
